I have a tendency to make the same recipes over and over again (spinach banana almond milk smoothie anyone?), but I'm really trying to switch it up a bit and play around with other ingredients. Apples and spinach are an obvious combination, and I threw in some deliciously ripe mango to add a bit of sweetness. I also used coconut water as my liquid base. It's the perfect healthy addition to a smoothie.
If you're looking for alternative to milks in smoothies, coconut water is a great substitute.

1 cup coconut water
1/2 apple, roughly chopped
Handful kale (thick stems removed)
4 ice cubes
1 tsp chia seeds
Add apple, mango and coconut water to smoothie and blend until apple is broken down. Add kale and continue to blend until it is smooth. Add ice cubes and continue to blend until ice is blended into the smoothie - most blenders have a function for crushing ice that is perfect to use here.
Pour into a glass and top with chia seeds for an extra fibre and protein kick!
