This was a quick experiment in making fruit taste savoury and it was delicious. I pulled my favourite spices from the cupboard, gave the cantaloupe pieces a quick toss and pan fried them until they were lightly charred. It's a whole new way of eating fruit! Warm, spicy, and sweet. Delicious.
1 cantaloupe, cut into large chunks
2 tbsp chili oil (or 2 tbsp olive oil with 1/2 tsp chili flakes)
1/2 tsp cumin
1/2 tsp cinnamon
Sprinkle of sea salt
1) Mix the chili oil, cumin, cinnamon and salt in a bowl. Add the cantaloupe and lightly toss to coat.
2) Preheat a small pan over medium heat. Add the cantaloupe pieces to the pan but don't pour any of the juices from the bowl into the pan - you want the pan to stay as dry as possible to allow the fruit to caramelize.
3) After about a minute, once a crust has formed on one side, turn each piece over to brown another side. Continue doing this until all sides are browned.
4) Plate the cantaloupe and drizzle with extra virgin olive oil.
