3 cups of organic whole oats (divided in half)
1/2 cup unsweetened shredded coconut
1 cup grated carrots
1/3 cup raisins
1 tbsp chia seeds
1 tbsp cinnamon
1 tbsp flax seeds
3 ripe bananas
1/4 cup olive oil
Preheat your oven to 325°C.
In a food processor, grind 1 1/2 cups of oats until a coarse flour forms. Pour this into a large bowl and add coconut, carrots, raisins, seeds and cinnamon.
In the same food processor, add the bananas and olive oil and blend until smooth. Pour the banana mixture over the dry mixture and mix with a spatula until it all comes together. Mixture should be slightly wet and hold together when pressed into a ball. If mixture is too dry, blend another banana and add it to the mix.
Use a 2 oz scoop or a spoon to portion cookies. Scoop onto a parchment lined baking sheet and press down to form a disc. You do not need to leave space between cookies because they will not spread. Bake for about 15-20 minutes or until lightly browned on the bottom and cookies hold together.
