I've made carrot smoothies before by juicing carrots and using the carrot juice as a base for my smoothie, but this time I went for a different approach and steamed the carrots before blending them. If any of you have a blender like mine, you may not want to put your blender through the strain of trying to grind down raw carrots. I usually end up with chunks in my smoothies when I try that approach, so this time around I lightly steamed my carrots, let them cool down, and then popped them in my blender and made a creamy carrot smoothie! To up the sweetness factor, I threw in a few frozen strawberries and a sprinkling of cinnamon. Delicious!
Yield: 1 serving
1 cup steamed carrots (approx. 2 medium carrots)
1 1/2 cups water
1/2 cup almond milk
5 large strawberries
1/2 tsp cinnamon
1) To steam carrots, cut carrots into even sized chunks. The smaller the chunks, the faster they will steam. Bring about 2 inches of water to boil in a pot. Insert a steaming basket, add carrots to the basket, and cover. Steam for 15-20 minutes or until lightly softened. No need to overcook these carrots, simply steam them until they can be cut through with a knife. Remove from the heat and cool.
2) Begin by blending cooled down steamed carrots in 1 1/2 cups water and 1/2 cup almond milk. Blend until smooth.
3) Add strawberries and cinnamon and continue to blend until smooth.
If it is too thick, add more water or almond milk to thin out.
