I used to go through boxes of Special K granola bars, Nature's Valley crunch bars, etc etc, and I hate to think back to how I thought I was eating a healthy snack, rather than the actual fact that I was essentially eating a sugar packed candy bar. Fast forward a few years and I'm a little wiser and way more food-savvy. These days I make my own sugar-free granola bars, snack bars, chocolate bars, and energy bites that are packed with nutrient dense foods and natural sugars to give me a pick me up when I need a quick snack.
These energy balls are filled with dates, walnuts, coconut, and gogi berries. Full of natural sugars and protein to give you a quick boost!
Yield: 8 energy balls
1 cup pitted dates
1/2 cup walnuts
1/2 cup unsweetened finely shredded coconut
1/2 cup gogi berries
2 tsp coconut oil
2 tbsp honey (agave or maple syrup for vegan option)
Extra finely shredded coconut for rolling balls in
1) Add all ingredients to your food processor and process until combined. It will not form a smooth paste but it will be finely ground and will hold together when you form it into a ball. If it is not sticking together, add more honey.
2) Form into small balls and place on a tray.
3) Pour some finely shredded coconut into a bowl and roll balls in the bowl to coat with coconut.
4) Refrigerate for 1 hour to set and then enjoy!
