The goodness of parsley:
Its high enzyme content promotes healthy digestion
Stimulates kidney function, helping to rid the body of toxins
Relieves water retention and bloating
Source of vitamins A, B, C, and K
Source of potassium and iron
This isn't a sweet smoothie so it's a nice change up from many of my other daily fruit-based smoothies. It is a perfect combination of parsley, lemon, ginger, avocado and banana. It is super creamy from the avocado and banana but nice and tart form the lemon and parsley. If you've never tried adding herbs to your smoothies before, then this is a great starter recipe to try. The parsley is not in any way overwhelming and you can choose to put as little or as much as you're comfortable with. I like the taste of greens so I added a nice big handful of flat leaf parsley.
Now I feel refreshed and ready for the day!
3/4 cups water
1/2 cup coconut water
1/4 cup packed flat leaf parsley
1/2 banana, frozen
1 inch piece of peeled ginger, grated
1/2 lemon, juiced
Place the water, coconut water and parsley in the blender and process until it is smooth. Add the remaining ingredients and continue to blend until perfectly smooth and creamy.
Pour in a glass and garnish with a juicy lemon slice.
