A combination of fennel, apples, peppers and red onions make a bright and refreshing salad. I mixed up a tasty sesame oil and lemon dressing to add an extra punch of flavour. Sesame oil is a great salad dressing base to use when you're getting tired of regular olive oil dressings.
1/2 medium sized fennel bulb, fronds removed, thinly sliced
1 tart red apple, thinly sliced
1 orange pepper, thinly sliced
1/4 red onion, thinly sliced
2 tbsp sesame oil
3 tbsp fresh lemon juice
1 tbsp honey (or agave for vegan version)
1) In a bowl, toss together the sliced fennel, apple, pepper and onion.
2) In a small bowl, whisk together the sesame oil, lemon juice, salt and pepper.
3) Pour dressing over salad and toss well.
4) Garnish with black sesame seeds.
