This dressing is best for a heavier salad, one full of vegetables and substance. I used this dressing to toss a snap pea, pepper, corn and avocado salad. There were no wimpy greens in this salad, just delicious veg. This salad dressing provides a huge pop of flavour and will brighten up any salad or vegetable dish.
Makes 1 cup dressing
3 tbsp olive oil
2 tbsp red wine vinegar
3 tbsp water
1/2 avocado, cubed
1 green onion stalk, roughly chopped
1/2 cup flat leaf parsley
1) Place all ingredients in a deep bowl or wide mason jar. Using an immersion blender, blend all ingredients until smooth. You could also use a blender or food processor if you don't have an immersion blender.
2) If it is too thick, thin out with a bit of water and blend.
