Who doesn't love avocados?? I know there are some of you out there who don't like avocados, and I will never understand you, because to me there is nothing more satisfying than cutting into a perfectly ripe avocado and scooping out the creamy flesh and sprinkling it with a bit of salt. Another amazing avocado combination is topping it with a soft poached egg. There's something about the creaminess from the egg and the richness from the avocado that is out-of-this world-good. Did I mention that I like avocados? ;)
So moving on to my morning smoothie with avocado. It is creamy and rich and perfect to start the day when you wake up feeling hungry and need to fill up your stomach quickly. This smoothie is not overly sweet and I only added a small bit of banana to lightly sweeten it, so if you feel that you like a more fruity smoothie, feel free to add more banana and more honey.
1 cup water
1/2 cup unsweetened almond milk
Large handful of spinach (I use fresh spinach bunches with stems included)
1/2 ripe avocado
1/2 banana, frozen
1 tsp honey (or 1/2 tsp agave nectar if vegan)
1 tsp flax meal
1/2 tsp cinnamon
Start by blending spinach, water, and almond milk until smooth. Add avocado, banana, honey, flax meal, and cinnamon and continue to blend until perfectly creamy. Feel free to adjust the consistency by adding more water if it is too thick.
Pour into a glass (or drink straight from the blender) and enjoy!
