This breakfast bowl is filled with protein from natural peanut butter, potassium from bananas, and fiber from flax meal. This is one of those perfect breakfasts to eat on a cold day, when you want something warm and comforting to fill your belly.
Yield: 1 serving
1 cup almond milk
1/2 cup water
3/4 cups GF oats (not instant oats)
1 tsp cinnamon
1 banana, sliced (half to be used in the oatmeal while it cooks, the other half for garnish)
1 tbsp peanut butter
1 tsp flax meal
1) In a pot, bring almond milk, water, oats and cinnamon up to a boil. Stir well, turn heat down to a simmer and cook for about 5 minutes, until oats are cooked and most of the liquid is absorbed.
2) Remove pot from the heat and stir in peanut butter and half of the banana slices. Stir well to combine.
3) Pour into a bowl and top with flax meal, the other half of the banana slices, and another dollop of peanut butter.
