Luckily for me, I've finally learned a bit of self control, and can handle having jam and peanut butter in my cupboard. I still eat both with a spoon (I'm never gonna kick that habit), but at least now I don't eat the whole container in one sitting. Progress!!
I cooked my oatmeal with almond milk and cinnamon and stirred in some natural peanut butter to up the creaminess factor. I then topped it with homemade strawberry chia jam! This is so satisfying and will keep you filled up all morning. You're gonna love this one. If you prefer other nut butters, feel free to swap out the peanut butter with your favourite nut butter.
Yield: 1 serving
3/4 cups gluten free oats
1 cup almond milk
1/2 cup water
1/2 tsp cinnamon
1 tbsp peanut butter
1/2 tsp vanilla
2 tbsp strawberry chia jam
1) Add oats, almond milk and cinnamon to a pot and bring to a boil. Stir well, turn the heat down to a simmer and cook for about 5 minutes, until most of the liquid has absorbed. I like to leave my oatmeal a bit wet so I remove it from the heat before all of the liquid is absorbed.
2) Stir in 1 tbsp peanut butter and vanilla.
3) Pour into a bowl and top with strawberry chia jam and a little extra dollop of peanut butter for fun :)
