I used to make jam using some of the classic recipes with pectin and sugar, but I was so excited when I discovered that you could make jam in about 10 minutes with only 3 simple healthy ingredients! All it takes is fruit, honey (or your choice of sweetener), and chia seeds! It's so simple and so easy to make. Buy some seasonal fruits and make a big batch so that you always have a jar on hand in the fridge. The chia seeds thicken your jam and are your pectin substitute. Chia seeds are little saviors here, because they have the binding effect of pectin and work super quickly to create a thick jam. They are also high in protein and fibre - making your jam not only delicious, but good for you!
Remember that you don't have to stop with these three ingredients. You can get super creative and add additional flavours - lemon zest, orange zest, vanilla, basil, mint, cinnamon, clove, chili flakes - whatever flavour combinations you like!
1 quart strawberries, stems removed and cut in half
2 tbsp honey (or agave or maple syrup)
2 tbsp chia seeds
1) Add strawberries and honey to a pot and cook over low heat, stirring occasionally. Cook until strawberries have softened and the liquid has leached from the fruit. Remove from the heat.
2) Using a potato masher or a fork, mash the fruit to your desired consistency. I like to leave my jams a little chunky.
3) Add chia seeds, stir well and set aside for 10 minutes to thicken. If it is not thick enough for you after the first ten minutes, add another tbsp of chia seeds and mix well. The chia seeds will continue to thicken as the jam cools, so don't go overboard on the chia.
4) Store in an airtight jar or container and refrigerate.
Enjoy with toast, rice cakes, oatmeal, or straight up with a spoon!
