I brought these to my book club last night (aka wine club, the books rarely make an appearance), and the girls loved them. They're super delicious, full of wholesome ingredients and they're really quick to whip up. If you want to impress people with your raw "baking" skills, then make this recipe now! It's the weekend, treat yo'self!
1 cup pitted dates
1/3 cup peanut butter
1/4 cup honey (or agave)
1/4 cup unsweetened shredded coconut
1/3 cup oats
1/2 cup organic cocoa powder
1/2 tsp salt
Add at the end:
2/3 cups whole grain rice puff cereal
1/3 cup gogi berries
1) In a food processor, add all ingredients except for the rice puff cereal and the gogi berries. Process until smooth. This may take some time and you will need to scrape down the sides of your food processor with a spatula.
2) Once this mixture is smooth, pour into a bowl and add the rice puff cereal and gogi berries and mix together. A wooden spoon or your hands will work well.
3) Using a square or circle mold (cookie cutters would work well), press mixture into the molds and pack it in tight. Gently push out of the mold onto a tray. Do this with all of the mixture. Refrigerate until firm.
You could also roll them into balls if you don't want to use molds.
