When I'm stuck in traffic, I plan recipes, I think about trips I want to take this year and I think about funny times laughing with my boyfriend. Positive thoughts combined with deep breathing can make a world of difference when you're feeling overwhelmed. 4 deep counts of breath in through your nose and 7 deep counts of breath out through your mouth. Do this 10 times and you'll feel so much better!
Ok, so what does this have to do with a chocolate bar?? Well, this is what I was thinking about and planning on my long drive home from work today. Amazing what a little raw chocolate bar can do for your mood, right? I made this with a combination of dates, cocoa powder, oats, coconut, almond butter, homemade strawberry chia jam, rice cereal, almonds and cranberries. This is one of those fantastic recipes that can be adjusted depending on what you have on hand and depending on your sweet tooth. I always stick with the base of dates, cocoa powder, oats, and nut butter, and then the rest is up to you!
1 cup pitted dates
1/4 cup oats
1/4 cup shredded unsweetened coconut
1/4 cup almond butter (or nut butter of your choice)
1/4 cup strawberry jam
1/3 cup cocoa powder
1 tbsp coconut oil
To be added at the end:
1/2 cup whole grain rice cereal
1/4 cup almonds, chopped
1/4 cup dried cranberries
1) In a food processor, add the dates, oats, coconut, almond butter, jam, cocoa powder, and coconut oil. Process until smooth. Stop the mixer and scrape down the sides with a spatula every so often. This might take a few minutes to get a smooth consistency.
2) Once smooth, pour this mixture into a bowl. Add rice cereal, chopped almonds and dried cranberries. Mix well with a spatula or your hands. Your hands are really the best tool here.
3) Spread mixture onto a flat tray and form into an even square/rectangle, about 1/2 inch tall. Use your hands to spread out the mixture until it is smooth.
4) Place in the refrigerator for about 1 hour to set. Slice into squares and enjoy!
