Three simple ingredients turn into one damn good frosting. It's creamy, thick and luscious. If you are looking for more of a mousse consistency, then simply add 1/4 cup of milk of your choice to the food processor and you will get a much lighter consistency.
I used this frosting as a layer in a raw vegan raspberry chocolate tart. It acted almost like a chocolate ganache layer in a cake, it was perfect!
1 ripe avocado
1/2 cup cocoa powder
1/2 cup pure maple syrup
1 tsp vanilla
Add all ingredients to a food processor and mix for about 4 minutes until perfectly smooth. You will have to stop the machine and scrape down the bowl a few times to properly incorporate all of the ingredients.
Serve on top of cupcakes, in a tart, or simply enjoy with some fresh fruit and a spoon!
